INGREDIENTS
  • 25 pc (90 g) Sliced green OLIVES FROM SPAIN
  • 200 g Semolina
  • 100 g Plain yoghurt
  • 30 ml Pure olive oil
  • 2 pcs Dry red chili
  • 7 pcs Curry leaves
  • 5 g Mustard seeds
  • Salt to taste

PREPARATION
  • Heat the oil and add dry chilli, curry leaves, mustard seeds and when they splutter, add the semolina and sauté over low heat, till an aroma emanates.
  • Take it off the heat and let it cool.
  • When cool, mix the semolina, the Spanish green olives and the yogurt to a smooth batter and add salt to taste.
  • Keep aside in a warm place for about an hour.
  • Prepare the idlis and steam immediately in an idli steamer for 6-9 minutes.
