Mediterranean spiced marinated olives

INGREDIENTS
  • 50 pc (200 g) Green OLIVES FROM SPAIN
  • 60 ml Extra virgin olive oil
  • 1 tsp Ground coriander seeds
  • 1 tbsp Fresh ginger (peeled and chopped)
  • 3 tbsp Honey
  • 1 pc Grated lemon zest
  • 2 tbsp Lemon juice
  • 2 tbsp Flat Parsley Leaf (chopped)
  • 2 tbsp Fresh coriander (chopped)
  • Salt and pepper to taste

PREPARATION
  • In a large bowl, mix Spanish green olives with the oil.
  • Add all the ingredients and mix well.
  • Wrap and refrigerate for 15 mins.
  • Bring to room temperature before serving. The mixture can be kept for a week.
