OLIVE ALOO TIKKI

INGREDIENTS

  • 1/3 cup green OLIVES FROM SPAIN (chopped)
  • 4 pcs medium potatoes
  • ½ tsp Cumin powder
  • ¼ tsp Smoked paprika powder
  • 1 pc finely diced green chilli (optional)
  • salt to taste
  • rice flour for coating
  • 2 tbsp olive oil or vegetable oil

4 people( makes 12 tikki’s)

PREPARATION

  1. Boil, cool and peel potatoes (do in advance, to allow time to cool)
  2. Mash the potatoes with a fork
  3. add cumin, paprika, green chilli, salt and the olives
  4. Add a spoon of olive oil and mix together
  5. Mould into 1.5 inch disks/tikki’s
  6. Dust the tikki’s with rice flour
  7. Keep in the fridge for 10 minutes
  8. Heat a non stick pan, add oil
  9. Shallow fry the tikki’s until brown on both sides
  10. Garnish with some more chopped olives and serve.
