ROASTED TOMATO AND OLIVE BRUSCHETTAS

Ingredients
  • 10pcs Spanish Black Olives, quartered
  • 2pc Tomatoes
  • 1pc Yellow Bell Pepper
  • 1Tbspn Fresh Basil Leaves, chopped
  • ½Tbspn Extra-Virgin Olive Oil
  • ½tsp Olive Oil
  • ¼cup Soft Goat Cheese
  • Coarse Sea Salt
  • 12Slices Baguette, sliced (1/2 inch thick) & toasted
Instructions
  1. Preheat the grill pan over medium-high heat for five to seven minutes.
  2. Cut the tomatoes and bell pepper in half lengthwise and de-seed them.
  3. Brush on both sides of the tomato & bell pepper halves with olive oil. Season with salt and pepper to taste.
  4. Chop the grilled tomato and bell peppers.
  5. In a bowl, mix grilled tomatoes, olives, grilled peppers, torn basil leaves and oil. Season with salt & pepper.
  6. Spread goat cheese onto toasted baguette slices. Top with tomato mixture. Serve immediately.
