PRAWN CASSEROLE WITH OLIVES

Ingredients
  • TOMATO BROTH
  • 500gms Tomatoes
  • 20gms Coriander
  • 3nos Garlic cloves
  • 5gms Hing (asafoetida)
  • Salt/pepper
  • 1nos Bay leaf
  • THE DISH
  • 10pcs Spanish green olives
  • 90gm Prawns
  • 10pcs Pimento Stuffed
  • 5pcs Spanish green olives
  • 5pcs Cherry tomatoes
  • 1spring Roast garlic cloves
  • 5leaves Roast baby onion
  • 100ml Rosemary
  • 30gr Basil
  • 1nos Tomato broth
  • 2nos Feta
  • 1nos Star anise
  • 10gm Green chilli
  • 10gm Red chilli
  • 10ml Ginger julienne
  • 10ml Red wine vinegar
  • 10ml Olive oil
  • 1spring Parsley leaves
  • 5pcs Walnuts
Instructions
  1. TOMATO BROTH
  2. Put all ingredients in a deep bottomed pan and cook till the mix starts to boil.
  3. Once it starts to boil, reduce the flame and simmer till the tomatoes leave their juice.
  4. Strain and use.
  5. THE DISH
  6. Heat oil and add the prawns and rosemary and sauté.
  7. Add the vinegar and deglaze.
  8. Add the garlic, onions and cherry tomatoes, chillies and ginger.
  9. Add the tomato broth.
  10. Pour the dish into the tawa and bake in the oven garnished with feta till the prawns are cooked.
  11. Garnish with pimento stuffed green olives, parsley, chili oil, walnuts and fried red chili.
