  • 30pcs Green olives
  • 100g Fresh Figs
  • 2tbspn Onion
  • 2cloves Garlic
  • 2pcs Star anise
  • 2tsp Sweet paprika powder
  • 100ml Olive oil
  • 2tbsp Tomatoes
  • totaste Salt
  • totaste Crushed Black pepper
  • 100ml Orange juice
  • 100ml Red wine
  • 6pcs Capers
  1. Poach fresh figs in orange juice and red wine reduction with star anise.
  2. Heat oil in a pan and add chopped garlic, onions and tomatoes.
  3. Add sliced Spanish olives, capers and poached figs and cook in a low flame.
  4. Adjust seasonings (season salt, pepper) and add fine herbs, parsley and cook till its set
  5. Place a ring in the plate and serve, take the ring out.
  6. Add garnish of olives and fresh herbs.
