PRAWN CASSEROLE WITH OLIVES

Green Olives from Spain

Prawns

Pimento Stuffed

Cherry tomatoes

Roast garlic cloves

Roast baby onion

Rosemary

Basil

Tomato broth

Feta

Star anise

Green chilli

Red chilli

Ginger julienne

Red wine vinegar

Olive oil

Parsley leaves

Walnuts

Tomato Broth

Instructions

TOMATO BROTH

  • Put all ingredients in a deep bottomed pan and cook till the mix starts to boil.
  • Once it starts to boil, reduce the flame and simmer till the tomatoes leave their juice.
  • Strain and use.

THE DISH

  • Heat oil and add the prawns and rosemary and sauté.
  • Add the vinegar and deglaze.
  • Add the garlic, onions and cherry tomatoes, chillies and ginger.
  • Add the tomato broth.
  • Pour the dish into the tawa and bake in the oven garnished with feta till the prawns are cooked.
  • Garnish with pimento stuffed green olives, parsley, chili oil, walnuts and fried red chili.
