PIMENTO STUFFED GREEN OLIVE BALCHAO – GOAN STYLE

Ingredients

Pimento stuffed Olives from Spain

Shrimp, cleaned and deveined (small to medium sized)

Olive oil

Onion, finely chopped

Tomatoes, finely chopped

Garlic, minced

Fresh ginger, minced

Cumin seed

Mustard seeds

Cinnamon sticks

Cloves

Sugar

Coconut toddy vinegar/White wine vinegar

Coarse sea salt

Instructions

  • Chop the garlic clove.
  • De-stem fresh thyme.
  • Add a dash of pepper.
  • Add a big portion of delicious black Olives from Spain.
  • Add whole grain mustard and capers.
  • Mash until finely textured.
  • Garnish generously with fresh parsley.
  • Enjoy.
